Robert, who happens to be married to Liz McCabe's grandaughter Elizabeth, carefully selects only grapes from old-growth, hillside vineyardes with low harvest-yields to intensify the ripe flavors and aromas of the grapes. The had-harvest they grapes when they taste ripe, not when they have a predetermined surgar level, and then hand-sort the grapes to help ensure that only the best fruit is used in their wine. They craft their wine with a maximal naturalist/minimal interventionist approach, age the wine in French oak barrels and bottle the wine when the ripe berry flavors have been enriched, but not overwhelmed, by the oak.

Truly a hand made 'special-wine'.
